Choose the trailer: the body takes its dimensions.
Secure the heavy items (oven, refrigeration) at the front, near the tongue.
Anything on wheels gets tied down: one strap per row of food carriers and carts.
Add up the wattage of the appliances to choose the generator.

What this plan is, and what it is not

Stay within the trailer's gross vehicle weight rating and the vehicle's towing capacity, and keep the tongue weight at 10 to 15% of the total weight. Gas cooking, hood, fire suppression system and sanitary facilities: have them approved by the municipality, the fire department and the authority that issues food permits.
